ANDA BHURJI OR EGG SCRAMBLE | |
This is Indian style scrambled egg. Anda refers to Egg and Bhurji refers to Scramble. 2 eggs chopped onions (1 small onion or 1/2 onion if it is big) 4 to 5 tbsp. oil 1 chopped Mirchi (chili pepper) or pepper 1/8 tbsp. crushed pepper 1/8 tbsp. Garam Masala (optional as it adds spicy to food) 1 chopped tomato (optional) salt, to taste Add 4 to 5 tablespoons of oil in pan and heat on low. Add chopped onions to pan and fry it until it turns to light yellow (add a few more tablespoons of oil if you feel it is required). Add optional ingredients like chopped Mirchi or pepper, tomato after onions turn into light yellow. stir gently all ingredients while frying. Add salt, crushed pepper, Garam Masala and stir all ingredients so that the spicy flavor reach the chopped onions. Add two beaten eggs to pan and fry/heat for three to five minutes. Do not forget to stir gently until all ingredients are cooked well. Dish will take 15 to 20 minutes to prepare on low heat, 10 to 15 minutes on medium heat. Do not prepare this dish on high heat.
