LEMONADE COOKIES 
1 c. unsalted butter, softened
1 c. sugar
2 eggs, beaten
1 tsp. baking soda
3 c. flour
1 pkg. (6 oz.) frozen lemonade concentrate, thawed

Cream together butter and sugar. Add eggs and set aside. In separate bowl, combine flour and baking soda. Stir in the egg mixture, then add lemonade concentrate.

Drop by spoonful onto a cookie sheet. Bake at 400 degrees for 8-9 minutes, or until edges are light brown. You can save a few ounces of the lemonade to brush on the cookies.
