FRESH STRAWBERRY PIE 
3 packs sugar substitute
1 sm. box sugar-free strawberry gelatin
3 c. fresh or frozen strawberries
3 tbsp. cornstarch
1 c. hot water
1 baked pie crust
1 pkg. prepared low calorie whipped topping

Mix gelatin, cornstarch and hot water; cook about 1 minute. Add sugar substitute and cool. Add slices strawberries to gelatin mixture and coat. Pour into cooled 9 inch pie shell and refrigerate. Top with low-calorie whipped topping before serving.

Serves 8.

EASY NO-ROLL PIE CRUST:

1 c. flour
8 tsp. vegetable oil
1/4 tsp. salt

Mix all ingredients in a bowl. Stir with a fork. Place in a pie plate and press crust out with fingers. Bake at 350 degrees for 12 minutes.
