BANANA CHOCOLATE CHIP MUFFINS 
3/4 c. firmly packed brown sugar
1/2 c. butter, softened
1 1/2 c. (3 med.) mashed ripe bananas
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1/4 tsp. salt
1/2 c. mini chocolate chips
1 c. all-purpose flour
1 c. whole wheat flour

Heat oven to 350 degrees. In large mixer bowl, combine sugar and butter. Beat at medium speed, scraping bowl often, until mixture is creamy (1 to 2 minutes). Add bananas, eggs and vanilla. Continue beating, until well mixed (1 to 2 minutes).

By hand, stir in flours, soda and salt just until moistened. Fold in chocolate chips.
