ZUCCHINI CASSEROLE 
4 c. diced zucchini
1 onion, chopped
1 c. grated Cheddar cheese
1 tsp. salt
1 tsp. pepper
1/2 tsp. oregano
1 diced tomato
1 c. Bisquick mix
3 lg. eggs
1/2 c. oil

Mix all ingredients except eggs and oil. Beat eggs and oil and pour over other ingredients. Bake in 2 quart casserole for 40 minutes at 350 degrees.
