SOUTHERN SPOON BREAD 
1 1/2 c. boiling water
1 c. white cornmeal
1 tbsp. butter
1 c. buttermilk
3 egg yolks
1 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
3 egg whites

Pour boiling water into cornmeal in large bowl, stirring constantly. Add 1 tablespoon butter and continue stirring until mixture is lukewarm. Stir in buttermilk, then beat in egg yolks. Stir in salt, baking powder and soda.

In separate bowl beat egg whites just until soft peaks form. Fold into batter. Pour into greased 2-quart casserole dish. Bake at 375 degrees for 45-50 minutes. Serve hot with butter. Makes 6-8 servings.
