SOUTHERN CORN BREAD 
1/4 c. vegetable shortening
2 c. white cornmeal
2 tbsp. all-purpose flour
2 tsp. Clabber Girl baking powder
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk
1 egg

Melt shortening in a 9-inch iron skillet or a 9-inch square baking pan in oven, brushing sides of pan with melted shortening. Sift together dry ingredients. Combine eggs, buttermilk and stir into dry ingredients along with melted shortening. Pour into hot pan. Bake at 450 (hot) degree oven for 20 to 25 minutes or until brown.
