SOUTHERN SPOON BREAD 
1 c. boiling water
1/2 c. cornmeal
1/2 c. skim milk
1/2 tsp. salt
1 1/2 tsp. baking powder
1 tbsp. vegetable oil
2 eggs, separated

Preheat oven to 375 degrees. Pour boiling water over cornmeal. Stir until smooth. Beat in remaining ingredients, except egg whites. Beat egg whites until stiff, fold into mixture. Turn into 1 1/2 quart casserole sprayed with vegetable pan spray. Bake for 25 to 30 minutes until set. Spoon into serving dishes.
