EASY YELLOW CAKE 
1 egg
scant 1/2 cup sugar
1 1/4 cups Bisquick baking mix
1/4 cup vegetable oil
milk
1 tsp. vanilla
icing (optional)

Preheat oven to 375°F.

Beat up one egg in bowl with fork. Add sugar and mix well. Add approximately 1 1/4 cups Bisquick, beat with whip. Add approximately 1/4 cup vegetable oil, add milk until batter is the consistency of cake batter. Add vanilla.

Bake at 375°F until cake comes away from sides of pan. Icing is optional. Cool thoroughly before icing.

Makes one small layer cake.

Just what I was looking for. I tried this recipe substituting Splenda for sugar. I needed it to be diabetic friendly. This recipe produced a light cake that worked well for cupcakes and cake.

This recipe wants you to be adaptive, and only add enough milk until a certain consistency ("cake batter") is reached. That way it comes out perfect.
