CRISPY BAKED CHICKEN 
1 (3 to 3 1/2 lb.) frying chicken, cut up
1 egg
2 tbsp. milk
1 c. instant potato flakes
1 tsp. garlic powder
1/4 c. grated Parmesan cheese
1/4 c. butter

Wash chicken pieces and pat dry. Set aside. Beat egg and milk in bowl. Mix together flakes, garlic and cheese in another bowl. Roll chicken in egg mixture and then in potato mixture. Melt butter in jelly roll pan. Roll chicken in butter and place in pan skin side up. Bake at 400 degrees for 45 to 50 minutes. Serves 4 to 6.
