MEXI-MELT APPETIZERS 
Preparation time: 15 minutes; cooking time: 2 minutes.

32 Keebler Townhouse crackers
3 (1 oz.) slices Monterey Jack cheese
6 (1 oz.) slices Cheddar cheese
4 tbsp. finely diced red pepper
4 tbsp. thinly sliced jalapeno peppers
4 tbsp. sliced ripe olives, cut in half

Cut cheese slices into triangles. Top each cracker with cheeses, pepper and olives; broil until cheese begins to melt.

Makes 32 appetizers.
