PANCAKE ROLLS 
1 c. flour
1/2 tsp. salt
3 eggs
1 1/2 c. milk

Sift flour and salt. Beat eggs slighty, add milk, mix and add flour. Beat together. Cook in hot frying pan with as little oil as possible to keep from sticking. Allow one full tablespoon for each roll, spread thin, about 3x4 inches in size.

FILLING:

1 med. onion, chopped
1 sm. clove garlic, shopped
1 1./2 lbs. hamburger, lean
1 c. cooked spinach, chopped
1/2 tsp. salt
2 eggs
1 sm. can tomato sauce
1 lg. can tomato juice
1/2 lb. shredded cheese

Fry onion, garlic, hamburger; drain. Add spinach, beaten eggs and tomato sauce and seasoning to taste. Mix well. Use one heaping tablespoon of filling for each roll. Place filling at one end of pancake an roll up securely. Place rolls in buttered 9x13 inch baking dish, cover with tomato juice and grated cheese. Bake 350 degree oven for about 50 minutes. This is a family favorite that my grandmother made.
