SUE'S FRENCH PANCAKES OR
"ROLLING - UPS"
 
3 eggs, well beaten
1 1/2 c. milk
1 tbsp. vegetable oil
1 c. flour
1/2 tsp. salt

Beat eggs, add remaining ingredients and mix (batter may be slightly lumpy). Melt small amount of butter to cover frying pan. (This is an important step to keep the first one from sticking.) With pan slightly warm, add enough batter to cover bottom. Let brown, flip and let other side brown. When done, place on plate and cover with cinnamon-sugar and roll like a crepe. (Sometimes we place a small amount of butter on the flipped side to hold the sugar mixture better.) While preparing this one to eat, more butter needs to be melted in pan to make the next one. (They--at least Charlie!--will come running for this delicious breakfast treat. And a tip from the cook: cut an end off each "rolling-up" so that you will get your share of this disappearing delicacy.)

This recipe is similar to the one my momma taught me years ago, except we add a teaspoon of sugar and place them all into a pan after they've been buttered, sprinkled with cinnamon and sugar and rolled cover them with foil and put them in a 350°F oven for about 20 mins. They make their own syrup and they're yum yum good with ham, bacon, or sausage to add that salty flavor.
