ROLL - UP PANCAKES 
3 eggs
2 tbsp. sugar
3/4 c. milk
3/4 c. flour
1/2 tsp. vanilla
1/4 tsp. salt
1/4 tsp. baking powder
1/4 c. butter, melted

Beat above ingredients together. Batter is very thin. Use about 1 tablespoon batter for each pancake. Roll pan to get them thin. Makes 1 pint batter. Put on syrup and roll up. May be eaten with fingers or cut up. (These are similar to crepes and may use syrups or fruits and whipping cream.) I find the hardest part is making them fast enough to keep up with the kids.

OMG, I've had Roll-Up Pancakes for years, my Great Grandma started making them, back probably in the late 1910's. We've always called them Roll-Up Pancakes, never crepes. I had to laugh when I actually saw a recipe, with that name. We always spread it with butter, and put either sugar in the inside or jam.
