CHICKEN ENCHILADAS 
1 frying chicken
1 med. onion
1/2 c. butter
1 can Rotel, tomatoes and chilies
1 can chicken soup
1 can mushroom soup
Doritos, taco flavored
Cheddar cheese, grated

Boil the fryer in salted water. Save the broth. Saute the onion in the butter. Blend Rotel, chicken soup, mushroom soup and broth with the onions. Line baking dish with taco flavored Doritos, then cover with chicken pieces. Pour the sauce over the chicken and sprinkle with crushed Doritos. Top with grated Cheddar cheese. Bake for 30 minutes at 350 degrees.
