TOMATO RELISH 
4 qt. cored, chopped green tomatoes
2 c. chopped green peppers
1 c. chopped onions
1 c. chopped celery
1/2 c. salt
2 c. sugar
3 c. white vinegar
2 tbsp. mustard seed
1 tbsp. celery seed

Combine tomatoes, green peppers, onions and celery. Sprinkle salt over the vegetable mixture and mix thoroughly. Let stand 3-4 hours. Drain well. Add sugar and spices to vinegar. Simmer 10 minutes. Add vegetables and heat to boiling. Simmer 10 minutes. Pack, boiling hot, in hot jars. Process 10 minutes in boiling water bath. Makes 5-6 pints.
