DATE NUT PINWHEEL COOKIES 
1/2 c. butter, softened
1/2 c. brown sugar
1/2 c. white sugar
1 egg
1/2 tsp. vanilla
2 c. flour, sifted
1/8 tsp. salt
1/4 tsp. baking soda

Beat butter, brown sugar, white sugar, egg and vanilla until light and fluffy. Add flour, salt and baking soda, mixing well. Chill until firm enough to roll. Divide dough in half. Roll on floured wax paper into two 9 x 12 inch rectangles. Spread with cooled filling. Roll up tightly in the wax paper, chill. Slice 1/8 inch thick. Bake on a lightly greased cookie sheet at 375 degree oven for about 10 minutes. Cool, store in airtight container.

FILLING:

1 (7 1/4 oz.) pkg. dates, cut up
1/4 c. sugar
Dash of salt
3/4 c. water
1 c. nuts, chopped

Mix all together and simmer for 5 minutes, stirring often. Stir in nuts. Cool.

NOTE: The dough may be made a day before.
