DOUGH: 1 c. butter 1 c. brown sugar 1 c. white sugar 4 1/2 c. flour 3 eggs 1 tsp. baking soda 1/4 tsp. salt 1 tsp. vanilla FILLING: 1 lb. cut up pitted dates 1/2 c. water 1/2 c. white sugar 1 c. chopped nuts Before you make the dough, get filling ready so it can cool. Add all ingredients of filling together. Bring to a boil. Let it boil gently for 5 minutes, do stir. Take off burner and let cool. To make dough: Combine sugars and butter until creamy. Add eggs and beat until all blended. Sift flour, salt and soda and add to first mix, add vanilla. Take a big piece of wax paper, add some flour, put dough mix on it and mix to flatten. Put another sheet of wax paper over and roll as for jelly roll. When date mix is cooled, spread on dough and roll up like a jelly roll. Refrigerate for a couple of hours and slice. Bake 325 to 350 degrees for approximately 10 minutes. |
