1/2 c. soft butter 1/2 c. brown sugar, packed 1/2 c. white granulated sugar 1/2 tsp. vanilla 1 egg 2 c. flour 1/2 tsp. salt 1/4 tsp. baking soda Cream butter, sugars, vanilla and egg. Beat until light, add dry ingredients and mix well. Chill until firm to roll (halve dough before refrigerating). FILLING: 6 1/2 oz. pitted dates (1 1/2 c.) 1/4 c. sugar 1/3 c. water Simmer 5 minutes, stirring often, add 1 cup finely chopped nuts (walnuts or pecans); cool. Roll each half of dough on floured waxed paper until measures 12"x19" rectangle. Spread filling on each rectangle and roll like jelly roll. Refrigerate until firm. Slice and bake on lightly greased sheet. Bake 8 to 10 minutes at 400 degrees. Store in air tight container. |
