MILKLESS PANCAKES FROM SCRATCH 
2 c. flour
4 tsp baking powder
3 large eggs
2 Tbsp. olive oil
2 Tbsp. sugar
1/2 tsp. salt
2 c. water
1 tsp. vanilla extract

This is a milk free version of pancakes from scratch. Easy and good yield of about 20 pancakes of about 4" diameter - perfect for our hungry family of four.

Put dry ingredients in a large mixing bowl.

Crack eggs into small bowl and beat till bubbles start to form. Stir in vanilla extract and oil.

Combine egg, oil and vanilla with dry ingredients and water and mix thoroughly to avoid lumps.

Scoop batter into medium-heat skillet in 1/3 cupfuls. Flip when bubbles form and edges begin to dry. Do not press down after flipping - this prevents rising of the pancake batter during cooking.

These were very flat, but we ate them with no other complaints. I think next time I will do what everyone else suggested...add more flour etc..or use less water.

Yum. They are a bit crepe like, but fluffy. They are not overly sweet which I like. I use syrup...so there's plenty added later. I followed the directions For the most part....except the mixing thouroughly to eliminate the lumps. Instead I mixed minimally and let sit for 4-5 minutes before cooking. they were fluffy and hit the spot. Thank you for posting so I could have my fresh Maine blueberries pancakes even though I was out of milk. I would make again even if I had milk. It's a nice alternative.

Fantastic recipe. I doubled the vanilla and sugar/Splenda. I didn't have olive oil so i used vegetable oh and I used white wheat flour and make sure you beat the eggs as instructed. Yum!

Yummy, fluffy soft and simply deelish. After reading comments, I beat the eggs very well, used water only 1cup and a bit and added bottled morello cherries. This was my first time EVER to make pancakes and this recipe was a winner.

If your pancakes are flat, you must wonder why other people's were not. Maybe your baking powder is old (over 6 months) or you didn't beat the eggs enough or you overbeat the batter. Mine were great, nice and fluffy! I used butter instead of olive oil. I beat the eggs till airy.

I tweaked the recipe a bit cutting it in half using yet using two eggs sipping them up in the bullet. I did not add sugar, salt or vanilla extract but i did add freshly ground almonds to the mix and water to the consistency I desired. The flour I used was self rising. They came out fluffy and tasty without the need for syrup.

I only made about a third of the recipe and added about 1 1/2 tbsp. of canned pumpkin and some cinnamon and they were really good!
