BANANA CAKE 
If you have some very ripe bananas, this is the solution!

1/2 cup (1 stick) butter
1 cup sugar
1 1/2 tsp. vanilla
4 tbsp. dairy sour cream
2 eggs
1 1/2 cups mashed bananas (very ripe)
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/4 cup raisins (optional)
1/2 cup chopped nuts (optional)
powdered sugar (for dusting)

In large bowl, cream together butter and sugar until light. Stir in vanilla and sour cream. Beat well. Add eggs and bananas; blend.

Combine flour and baking soda; stir into cream mixture until smooth. Fold in raisins and nuts, if desired. Place in greased and floured 8x11-inch pan and bake at 350°F for 35 to 40 minutes.

When completely cool dust with powdered sugar.
