BANANA SPICE CAKE | |
2 3/4 c. flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1/4 tsp. cloves 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 2/3 c. shortening 1 1/3 c. sugar 2 eggs, beaten 1 2/3 c. mashed ripe banana 2 tsp. pure vanilla Preheat oven to 350°F. In a large mixing bowl, beat together sugar and shortening (shortening can be coconut, vegetable, or even butter - we do not use hydrogenated shortening). Add eggs, one at a time, and beat well after each egg is added. Add half of the dry ingredients (no need to be exact), then add the mashed banana. Next, add the remaining dry ingredients and finally, the vanilla. Use a large oblong baking pan (9x13-inch) that has been sprayed with non-stick spray and lightly dusted with flour (shake out excess flour). Add batter and spread evenly in pan. Bake for 35 to 40 minutes at 350°F. Cool completely and add coffee frosting. Coffee Frosting: Mix coffee with water and add to your favorite butter cream frosting. Note: If you don't want to frost the cake, brush it with melted butter and sprinkle the top with confectioners or even coarse demerara sugar. Or glaze it with confectioners icing.
