LAURA'S BANANA CAKE 
1/4 cup (1/2 stick) butter
1 cup sugar
1 cup mashed banana
1/2 cup dairy sour cream
2 eggs, beaten
1 tsp. vanilla
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Beat butter and sugar till creamy, add the bananas, sour cream, egg and vanilla till well mixed. Gradually add dry ingredients, mixing after each addition.

Grease a 9x13-inch baking pan. Pour in batter and bake at 350°F for 25 to 30 minutes.

You can ice the cake with cream cheese icing or serve plain.
