MILKLESS PANCAKES FROM SCRATCH 
2 c. flour
4 tsp baking powder
3 large eggs
2 Tbsp. olive oil
2 Tbsp. sugar
1/2 tsp. salt
2 c. water
1 tsp. vanilla extract

This is a milk free version of pancakes from scratch. Easy and good yield of about 20 pancakes of about 4" diameter - perfect for our hungry family of four.

Put dry ingredients in a large mixing bowl.

Crack eggs into small bowl and beat till bubbles start to form. Stir in vanilla extract and oil.

Combine egg, oil and vanilla with dry ingredients and water and mix thoroughly to avoid lumps.

Scoop batter into medium-heat skillet in 1/3 cupfuls. Flip when bubbles form and edges begin to dry. Do not press down after flipping - this prevents rising of the pancake batter during cooking.

4 kids 11, 9,6 and 16 month old and myself ate the entire batch, and could of used prob. another 1/2 recipe worth! Yummy! Mine were nice and fluffy. Reduced the water to 1 3/4 cup water, an extra teaspoon of sugar and added some cinnamon. Will make again!

My kids and I loved this recipe! I have to be on a milk-free diet right now and this was perfect. I also added less water around 1 1/4 cups and the pancakes came out fluffy and thick.

These were so good. I used wheat flour instead of white, and a little less olive oil. I also put fruit in a couple of them. They were very fluffy, and so good! I will be saving this recipe for future use that is for sure!

These pancakes were ok, they needed some work to make them really good. At first they were really flat, dense, and flavorless when I made them. I only made half the recipe because I only needed to feed two people. Here is what I did: increase the flour and sugar by 1 tablespoon each. I also added 1 teaspoon of cinnamon and another 1/2 teaspoon extra of the vanilla extract.

I did a test run of this recipe in preparation for a friend coming over who is unable to eat dairy products. I made a couple of changes and brought them to work for feedback (my co-workers are my guinea pigs for all my recipes). Based on the comments below, I doubled the sugar to 4 tbsp. of sugar, but instead of all white sugar, I did 3 tbsp. of white sugar and 1 tbsp. of brown sugar. And, in place of the olive oil, I used vegetable oil; I think this really made a difference based on the feedback from others that they were dense. These were nice and light. I put blueberries in some, and everyone ate them right up. I might even consider using this recipe from time to time in place of the "regular" pancake recipe I have!

I didn't have any milk so I made these for myself and some friends. I only have one bowl so I mixed everything together in one large bowl.. Eggs, everything. Also, 4 tsp of baking soda seemed to much so I put about 2 1/2 tsp. After mixing the batter was pretty runny so I added a bit more flour. Mix then started cooking. They are pretty dense cakes but tasty!!! My friends liked them and we all agreed they turned out pretty good. Recipe yielded 15 small to medium sized pancakes... This recipe is worth a try if you have no milk available.

I halved the recipe since we're only two people in the morning, but once it was all mixed it was WAAAY too runny. I added another 1/4 cup of flour which made it a bit thicker. They didn't really brown or fluff, but they tasted quite good. I added strawberries and used sweet & low instead of sugar, too.

Delicious! I cut the recipe in half with exception to the following: added two eggs, a tablespoon of sugar, and only used 1/2 cup of water.
Usually, when making buttermilk pancakes, all of the liquid is combined, then added with the dry ingredients. This recipe states to add water after adding egg/oil/vanilla combo to the dry mixture. I followed these directions and the pancakes turned out. Thank you! Tried this today because I was out of buttermilk. :)
