MILKLESS PANCAKES FROM SCRATCH 
2 c. flour
4 tsp baking powder
3 large eggs
2 Tbsp. olive oil
2 Tbsp. sugar
1/2 tsp. salt
2 c. water
1 tsp. vanilla extract

This is a milk free version of pancakes from scratch. Easy and good yield of about 20 pancakes of about 4" diameter - perfect for our hungry family of four.

Put dry ingredients in a large mixing bowl.

Crack eggs into small bowl and beat till bubbles start to form. Stir in vanilla extract and oil.

Combine egg, oil and vanilla with dry ingredients and water and mix thoroughly to avoid lumps.

Scoop batter into medium-heat skillet in 1/3 cupfuls. Flip when bubbles form and edges begin to dry. Do not press down after flipping - this prevents rising of the pancake batter during cooking.

Needed a milk-less recipe and I whipped these up real quick for the kids! it was great we followed the recipe and added some cocoa and food coloring... I made shapes and initials, it was fun and was a bit dense but I made them thin and they cooked up quickly which was perfect for the shapes with the kids! FAST EASY AND FUN!!!

just tried these, but halfed the recipe and used self rising flour instead of the baking powder and salt, also cut the oil in half...WONDERFUL and they rose like an 1/2 inch, more than any pre-made mix Ive ever tried, with only 1 cup of flour i yeided 6XL pancakes...yummy and easy, guess not having milk isnt an excuse any more :)

I did this one vegan with the good ol' flax egg. Flavor, texture, and thickness are all acceptable after adjusting, and I have constant battles with thin pancakes. Nothing great, but we have pancakes!

Great recipe for when you're out of milk! They turned out super fluffy and delish! One thing I changed was the flour : I used 1 cup unbleached white flour and 1 cup whole wheat flour, and it tastes excellent! I topped it with cinnamon sugar and honey... Totally satisfying!

I used about 1 1/2 cups of water, a little extra vanilla, and 2 tbsp of applesauce instead of oil. They were pretty fluffy! They were a little more moist than I expected them to be, but they still had a good texture and tasted great! I'll definitely save this recipe (plus my minor adjustments, of course)! =)

I'm unable to have calcium (dairy) in the morning due to medication I'm on, so this recipe was a lifesaver. I beat the eggs with a mechanical hand beater until they were very frothy and then added them it. My pancakes were still very fluffy! Thanks!

This recipe was a great starting point for me, and is clutch for when there's no milk in the house, you're broke, but have a pretty stocked pantry and want awesome breakfast.

I added an additional tsp of baking powder (5 total), removed one egg (I've made a mild recipe with 2.5c flour and only 2 eggs so I figured 3 wouldn't be necessary here), added an extra 1/2 tsp salt (1 tsp total, just my taste), and only used 1.5 cups of water...the batter was as thin as I wanted it to be after that. I suggest starting with that amount and adding more as you see fit.

My pancakes came out fluffy and delicious. I did them both a bit lumpy and right after mixing, and completely smooth and right out of the fridge two days later, and they've been consistently good. Going for another helping for breakfast in a bit!

This recipe turned out great! My pancakes turned out really fluffy and thick they were more fluffy and fuller than my moms pancakes she made and she even used milk.. I read other reviews where there's turned out flat.. Well what I did was I added a little extra flour, sugar and vanilla, also when I went to beat the eggs I mixed them until the eggs were really fluffy then I added them.. So all in all they turned out really well for me!

Yumm!! Made the recipe to the letter, just added a lil extra sugar. They're delicious! Not sure why people are getting flat pancakes. Mine were too thick, I had to add a lil extra water. My new fave pancake recipe for sure!

I halved the recipe, placed most of the water with apple sauce, and added cheddar and chia seeds! It's great!
