RICE PUDDING WITH OLD FASHIONED
LEMON SAUCE
 
RICE PUDDING:

1/2 stick butter
3 lg. eggs
1 1/4 c. sugar
1 qt. milk
2 c. cooked rice
2 tsp. vanilla
1/2 tsp. nutmeg
1/2 tsp. salt
Raisins

Melt 1/2 stick butter in large baking dish. Beat 3 large eggs. Add gradually next 6 ingredients. Pour mixture into melted butter. Sprinkle 1/2 cup raisins into pudding. Bake at 300 degrees for 1 to 1 1/2 hours or until set. Serves 6-8.

OLD FASHIONED LEMON SAUCE:

1/2 c. butter
1/4 c. water
3 tbsp. lemon juice
1 c. sugar
1 egg, well beaten
Grated rind of one lemon

Combine all ingredients. Cook over medium heat, stirring constantly until boiling. Serve warm. Can be refrigerated and reheated. Yield: 1 1/3 cups. Wonderful over cooked rice, bread pudding, pound cake, etc.
