BEST EASY PANCAKES 
1 1/2 cups plain flour
2 teaspoons baking powder
3 tablespoons of butter, melted
1/2 teaspoon salt
1 tablespoon white sugar
2 teaspoons vanilla
1 1/2 cups milk (room temperature)
1 egg

Microwave butter for 15 seconds and let cool to room temperature.

Sift the flour into a bowl and mix in the baking powder, salt and sugar. Add the milk, egg, vanilla and melted butter and mix until smooth.

Lightly butter a non-stick frying pan and pour the mixture in half a cup at a time. Use medium heat. There is enough butter in this mixture, that you don't need to re-butter the pan in between each pancake. Flip and brown the other side just as the mixture appears to set.

Great for breakfast... or dessert. Just vary your toppings.
