EASY ITALIAN CHICKEN 
5-6 chicken breasts (skinless)
1-2 bell peppers
1 lg. onion
2 (15 oz.) can whole tomatoes
1 tsp. garlic, minced
1 c. can or fresh mushrooms
2 c. shredded mozzarella cheese

In large skillet lightly brown chicken breast in small amount of oil. Remove excess oil. Add all ingredients except cheese. Cover and simmer 45 minutes or until chicken is done. Pour cheese on top, cover with lid until cheese melts. Serve over rice or pasta.
