QUICK AND EASY ITALIAN CHICKEN 
2 boneless chicken breasts
1 tbsp. dry Italian seasoning
pinch of salt
pinch of pepper
1/2 tbsp. dried chopped onions (use 1 tbsp. if desired)
1/2 tbsp. dried chopped basil
4 tsp. apple cider vinegar
tin foil and your average glass baking dish :)

Preheat oven to 400°F.

Rinse chicken breasts with cold water, set in clean dry baking dish. Cut a slit down center of the chicken breasts. Lightly stuff opening in breasts with onions, sprinkle remaining onions over breasts. Sprinkle Italian seasonings, basil leaves, and salt & pepper over chicken, taking care to get ingredients in slits. Drizzle vinegar in, over, and around breasts. Cover with tin foil.

Bake at 400°F for 16 to 22 minutes or until meat thermometer reaches 165°F.

Cheesy Variation: For cheese lovers or just to spice up the dish, at 13 to 15 minutes uncover and add shredded Mozzarella cheese. Bake uncovered for an additional 5 to 10 minutes or until cheese is browned on top.

Serves 2.

This Italian chicken is SO simple but seriously delicious. I used a whole tablespoon of onions and added lots of Mozzarella per the variation. The cider vinegar adds this amazing tangy twist that I wasn't expecting. Thank you for sharing!
