A HEALTHY WORLDLY TUNA SALAD
This is really simple.

6 (6 oz. ea.) cans solid white albacore tuna, drained
4 celery stalks (medium sized)
1 small onion
4 or 5 oz. mayonnaise (use sparingly, as this determines how healthy your salad will be)
salt
fresh cracked pepper (if you can get it)
5 fresh basil leaves (also if you can get it)

Mince celery, onion, and basil. Mix it all together. Drain tuna and add it to the mix along with mayonnaise.

Note: If you wanna go all out nuts on the healthy thing, smart balance makes a good one, or you could always go with the soy based mayo which may be better than the smart balance.

Season with salt and pepper, to taste, and remember that the tuna should have a nice amount of salt in it already. Mash and mix everything in a mixing bowl with a masher or a fork.

Serve immediately if you are impatient, but for best results, cover and chill in refrigerator before serving.

Makes a whole 'lotta tuna salad.
