PAUL'S MEXICAN SALAD 
1 head lettuce
1 bottle Thousand Island dressing
1 green pepper, thinly sliced
1 white onion, diced
12 oz. grated Monterey Jack cheese
1 lg. bag tortilla chips
1 lb. hamburger
1 can red kidney beans
1 packet powdered taco seasoning
1 lg. tomato, cut into 1/2" cubes

1. Combine hamburger with 1/2 of diced onion and saute. Drain fat from cooked mixture and set aside to cool.

2. Put chopped lettuce in large bowl and combine with onions, pepper, grated cheese and cubed tomatoes.

3. Drain kidney beans and add to mixture along with cooled hamburger/onion saute (more beans can be added instead of hamburger for vegetarian style salad).

4. Crush 1/2 of the bag of tortilla chips and mix with salad. Add whole bottle of dressing to mix. Add taco seasoning to taste.

5. Garnish top of salad with chips.
