COCONUT DATE BALLS 
1/2 c. (1 stick) butter
1 egg, beaten
1 c. sugar
8 oz. chopped dates
2 c. Rice Krispies
1/2 c. chopped nuts
1 tsp. vanilla
coconut flakes, for rolling

Place first four ingredients in saucepan and cook 10 minutes from the time you put it on the stove. Remove from heat. Cool.

When mixture has cooled, add Rice Krispies, chopped nuts and vanilla. Mix well. Roll into balls, then roll in coconut flakes. Store in the refrigerator. Use a teaspoon to measure size of balls.
