PICANTE CORNBREAD MUFFINS 
1 tsp. sugar
1/2 tsp. salt
1 tsp. baking soda
1 1/2 c. yellow cornmeal
2 egg whites
1/4 c. picante sauce
1/4 c. vegetable oil
1 (8 oz.) carton nonfat, plain yogurt
Cooking spray

Combine sugar, salt, soda, cornmeal. Combine egg whites and next 3 ingredients. Add to dry ingredients, stirring until moistened. Spray muffin pans with cooking spray. Spoon mixture into muffin pans. Bake at 425 degrees for 18 to 20 minutes. Remove from pans. 1 dozen.
