GRANDPA'S LIP SMACKIN CORNBREAD
MUFFINS
 
1 1/2 c. cornmeal (yellow is best)
1/2 c. all purpose flour
1 tbsp. baking powder
1 tsp. salt
1 1/2 c. milk
1/4 c. vegetable oil

Mix all ingredients well. Grease muffin tin. Fill muffin cups 3/4 way full. Bake for 25 to 30 minutes at 425 degrees. Makes 1 dozen. You can add for variety: 1/2 c. cheddar cheese diced, or 1/4 cup bacon bits, or 1/4 jalepeno peppers, or all of the above combined.
