SWEET AND SOUR PORK 
1 1/2 lb. spareribs (cut in 1" pieces)
3/4 c. salad oil
1 clove garlic, minced & cooked
1 green pepper, cut up
Few celery sticks, cut up
1 onion, cut up
1 sm. can pineapple chunks
1 c. chicken broth
2 1/2 tbsp. cornstarch
1/3 c. cider vinegar
1/2 c. sugar
2 tbsp. catsup
2 tbsp. soy sauce

Make batter of: 4 tbsp. flour Season with salt & pepper

Dip ribs into batter. Brown slowly until well done. In deep saucepan cook onion in 1 tablespoon oil; add green pepper, celery and 1/3 cup chicken broth. Cook 5 minutes. Add cooked spareribs, pineapple and cook 5 minutes more.

Blend cornstarch, soy sauce, vinegar, sugar, catsup and remaining chicken broth. Cook, stirring constantly until mixture thickens. Pour over spareribs, cover and cook 3 more minutes. Stir occasionally.
