WHITE BEAN SOUP 
1 lb. Great Northern white beans
2 1/2 c. diced, smoked Polish sausage
2 c. diced celery and leaves
1 1/2 c. diced carrots
3/4 c. chopped green onions or reg. onions
1 pod hot (dried) red pepper
1 c. canned whole tomatoes, chopped
2 tsp. salt
3/4 tsp. pepper

Sort and wash beans. Put them in a large kettle and cover with 2 inches of water. Let them soak overnight. Drain.

Add 4 quarts of water and bring to a boil. Reduce the heat to medium and cook uncovered for 1 1/2 hours. Stir occasionally.
