BEEF AND BEAN ENCHILADAS 
1 1/2 lbs. ground beef
1 onion
1 can (1 lb.) refried beans
1/8 tsp. garlic powder
1/3 c. taco sauce
1 can chopped olives
12 corn tortillas
3 c. shredded Cheddar cheese and Jack cheese
Sour cream
Hot green chili salsa
2 cans enchilada sauce

Saute meat and onion. Drain. Add rest of ingredients, mix well. Roll mixture into tortillas and place in a 9x13 pan. After this is filled, cover with enchilada sauce. Top with cheese.

Bake in 350 degree oven for 45 minutes or when the cheese is melted. Serve with sour cream and chili salsa. Can be fixed the day before and refrigerated, then baked.
