BEEF AND BEAN ENCHILADAS 
16 (5 inch) flour tortillas
1 lb. ground beef
1 pkg. taco seasoning
1 sm. can refried beans
3 c. finely grated Cheddar cheese
1 can sliced black olives
2 jars salsa or picante sauce
Sour cream

Brown ground beef and mix in taco seasoning packet according to package directions. Stir in refried beans and mix well. Place tablespoon of meat mixture on tortilla, top with some Cheddar cheese and roll tortilla tightly. Repeat for all 16 tortillas and place in large baking pan.

Spread any remaining meat mixture over top of tortillas. Top with salsa, remaining cheese and black olives. Bake at 350 degrees for 30 minutes. Serve hot with dollops of sour cream.
