BEEF AND BEAN ENCHILADAS 
12 corn tortillas
1 (16 oz.) can refried beans
1 lb. ground beef
2 (8 oz.) jars red taco sauce
2 c. grated Cheddar cheese
3 green onions, diced

Brown the ground beef, draining off the excess fat. Add 1 jar of taco sauce and stir well. Place remaining jar of taco sauce in a flat dish.

One a time, warm soften each tortilla by heating in a lightly oiled non-stick skillet for 30 seconds on each side. Dip the warmed tortilla in the remaining taco sauce, coating both sides lightly.
