BEEF AND BEAN ENCHILADAS 
1 lb. ground chuck
1 pkg. taco seasoning mix
3/4 c. water
1 sm. can refried beans
1 lb. Velveeta Hot Mexican cheese
2 jars Frito-lay salsa (or one of your choice)
1 pkg. flour tortillas (12 to a pack, small size)
Sour cream

Brown ground chuck and drain. Add water and taco seasoning mix. Simmer for 15 minutes. For added spiceness, add a few slices of cheese the last 2 minutes. Meanwhile, heat refried beans. Spoon a tablespoon of meat and beans across the bottom of each tortilla. Roll up each tortilla. Place in two 8 x 8 baking dishes coated with non stick spray, seam side down. Pour salsa over the enchiladas. Slice cheese (amount as desired) and place generously on top of the enchiladas. Bake at 350 degrees until cheese melts, approximately 15 to 20 minutes. Garnish with sour cream. Makes approximately 10.
