BEEF ENCHILADAS 
1 lb. lean ground beef
1 sm. onion, chopped
1/2 green pepper, chopped
1 lg. can tomatoes, chopped
1 pkg. taco seasoning
1 sm. can Bush bean (baked) (discard bacon)
1 c. shredded Colby cheese
1 c. Monterey Jack cheese
1 pkg. flour tortillas

In large fry pan cook ground beef, onions and green pepper until cooked. Drain off all grease. Add tomatoes with liquid, beans and taco seasoning. Simmer over low heat for 15 minutes.

Fill each flour tortilla with meat mixture and roll. Place seam down in greased baking dish. Layer if needed. Cover with cheese. Bake at 350 degrees for 30 minutes.
