BEEF ENCHILADAS | |
1 lb. lean ground beef 1/2 tsp. salt 1/8 tsp. pepper 2 (4 oz.) cans peeled green chilies, drained 1 med. onion, chopped 2 cloves garlic, minced 1 (15 oz.) can tomato sauce 1/2 tsp. oregano leaves 8 (8") flour tortillas 2 1/2 c. grated sharp cheddar cheese 2-3 tsp. chopped green onions with tops Sour cream for topping Preheat oven to 350 degrees. Combine ground beef, salt, pepper, green chilies, onion and garlic. Cook over medium heat until beef is browned and onion tender. Drain and set aside. |
