GREEN BEEF ENCHILADAS 
12 tortillas
1 clove garlic (minced)
1 onion (minced)
1 green pepper (minced)
1 1/2 lbs. hamburger
1 tbsp. cooking oil
1 tbsp. chili power
1 bay leaf crumbled fine

1/2 lb. sharp Cheddar cheese (grated) (To be spread over to prior to baking.)

Saute onion, green pepper in oil for 3 minutes. Stir in hamburger, bay leaf and chili powder. Simmer covered, stirring occasionally for approximately 25 minutes.

GREEN SAUCE:

1 onion (minced)
1 lg. red tomato (diced)
1 can green chilis (drained and minced)
3 tbsp. butter (melted)
3 tbsp. flour
1 can cream of chicken soup (no water)
1/2 c. milk
1/2 lb. Monterey Jack cheese (grated)
1/2 lb. sharp Cheddar cheese (grated)
1 c. sour cream

Melt butter and stir in flour. Gradually add milk and soup and sour cream. Simmer. Stir in cheeses. When melted in sauce add minced onion, chilis and tomatoes.

Preheat oven to 350 degrees.

Dip each tortilla in green sauce. Fill with meat mixture. Roll up and place seam side down in well greased 9x13 loaf pan. Pour remaining sauce over tortillas and sprinkle with Cheddar cheese. Bake 30 minutes.
