GREEN BEEF ENCHILADAS 
Hamburger meat
1 (8 oz.) can tomato sauce
Enchilada seasoning
1 lb. Velveeta cheese
1 sm. can green chilies
1 sm. jar pimentos
1 can cream of chicken soup
Diced onion
Corn tortillas
Shredded Cheddar cheese

Follow directions on back of enchilada seasoning envelope; simmer. Cut Velveeta into small cubes and put in Dutch oven with little milk. Stir constantly until melted and add next 4 ingredients. Mix well, set aside.

Fry the corn tortillas until soft. Spoon about 1 tablespoon of meat sauce in tortilla, roll and put in baking dish. When finished, pour cheese sauce over enchiladas until well covered; sprinkle shredded cheese on top. Put in 400 degree oven until cheese has melted. Use remaining cheese sauce as a dip for tortilla chips.
