GREEN BEEF ENCHILADA 
1 lb. ground beef
1 med. onion
1/2 lb. grated longhorn cheese
16 to 20 tortillas
1 can cream of chicken soup
3/4 c. milk
1/4 lb. Velveeta cheese
1 sm. can chopped green chilies

Brown ground beef with onion, drain. Cool slightly and add 1/2 pound grated cheese. Soften tortillas in salad oil one at a time, then drain on paper towels.

Mix soup, milk, Velveeta cheese, and chilies. Cook stirring until cheese melts. Wrap meat mixture in softened tortillas. Place in 9 by 13 dish. Cover with sauce. Cover dish with foil. Bake at 350 degrees for 25 minutes.
