BEEF ENCHILADA PIE 
12 oz. ground beef or ground turkey
1 pkg. dry enchilada mix
1/3 c. diced onion
1 tsp. minced garlic
1/2 tsp. salt
1 (3 oz.) can green chilies
2 c. cooked rice
1 can chopped tomatoes
4 oz. shredded cheese
1 tsp. parsley
1 c. tomato juice

Brown meat; drain. Add garlic, onion and tomato juice. Cook 10 minutes. Add enchilada mix, green chilies, parsley and chopped tomatoes. Heat and add rice. Put in 9 x 13 inch pan. Bake at 350 degrees for 25 minutes. Top with cheese and bake about 5 minutes more or until cheese melts.
