BEEF ENCHILADA'S 
1 1/2 lbs. ground beef
Lg. bowl grated Cheddar cheese
1 onion, chopped
1 lg. can enchilada sauce
1 med. can tomato sauce (optional)
1 doz. corn tortillas

Bake at 350 degrees. Serve with sour cream and sprouts. Saute onion in butter. Add burger and brown. Drain grease. Heat sauce and tomato sauce in a saucepan. Heat tortillas in 350 degree oven for 7 minutes. Have grated cheese ready. Dip heated tortillas in sauce; put burger and onion mixture in middle. Add some cheese, then roll and place in a greased pan. Pour remaining sauce on top. Sprinkle with grated cheese. Bake at 350 degrees for 1/2 hour. Serve with sour cream and sprouts.
