BEEF ENCHILADAS 
1 lb. ground beef

Mix with 1 package of enchilada sauce mix. Add chopped onion and brown meat. Drain, then add some grated Cheddar cheese.

Meanwhile, put some oil in a pan and heat corn tortillas (to make soft) (12 per pound of meat).

SAUCE:

1 can chili
1 can water
1 pkg. enchilada sauce mix

Combine these 3 ingredients - simmer - thin with tomato sauce.

Put some sauce in bottom of pan. Fill tortillas with meat mixture. Roll up. Pour remaining sauce over all. Garnish with cheese. Bake in oven at 350 until bubbly.
