BEEF ENCHILADAS 
1 lb. ground meat
1 lb. Cheddar cheese, grated
1 onion, chopped
15 to 20 corn tortillas
2 cans chili

Brown meat. Add chili and about 1 can of water. Dip tortillas in chili mix. Put some cheese and onion in tortilla and roll. Place in pan until all tortillas are used or until pan is full. Pour remaining mixture over the top. Sprinkle remaining cheese and onion over this and bake at 350 degrees for approximately 20 to 30 minutes.
