CHEESE AND BEEF ENCHILADAS 
1 pkg. flour tortillas
1/2 lb. Cheddar cheese
1/2 lb. hamburger meat
1 onion, chopped
1/2 stick butter
1/4 c. flour
2 c. milk
1/2 lb. Velveeta cheese
1 sm. can green chilies

Brown meat and onion. Add Cheddar cheese. Roll meat and cheese mixture in tortillas. Place in casserole dish.

Make sauce of remaining ingredients and pour over tortillas. Cook until bubbly and hot at 375 degrees.

Sauce: Cook butter, flour and milk like a thickening. Add Velveeta cheese and green chilies. Cook until thick and smooth.
